You choose the table, she arrives as your guest, and for three or four hours the evening looks like precisely what it is, two people eating well and talking better. The difference is what happens afterwards: nothing is posted, nothing is filed, and nobody who poured the wine will ever be asked to remember you.

The format is set per companion, quoted in full and confirmed on WhatsApp before the reservation matters. The first hour anywhere starts from €180 per hour, and a complete dinner evening is agreed as one figure, stated before she dresses for it.

Book the restaurant yourself and keep the reservation in your own name; tell the thread only the neighbourhood if you prefer, since geography covers all the planning we need. Candlelit rooms in the Jordaan suit a quiet first meeting, the market streets of De Pijp suit an easier, livelier one, and hotel dining rooms work anywhere when leaving the building feels like effort.

Mention the dress code in the thread, formal, smart or relaxed, and she arrives matched to it. If the table is set for eight rather than two, say so; company for a group dinner is a different brief, and we would rather hear it early.

How the evening runs.

She will meet you wherever you decide: seated at the table, by the entrance, or at your hotel beforehand for an aperitif. From there the pacing is yours. Companions on this roster are chosen partly for conversation, so the hours tend to disappear between courses, and the walk back along the water is usually where the evening decides whether it wants to end.

Extending past the agreed time is a single line in the thread, quoted and accepted before the next glass is poured. Nothing about the dinner is logged with us afterwards, no venue, no date, no preference; hence the name of the format.

Amsterdam eats differently through the year, and the booking should know it. Summer belongs to canal-side terraces and tables that watch the boats go by, autumn to the candlelit rooms this city does better than almost anywhere, and the cold months to long tasting menus that nobody hurries. Terrace weather fills the best tables early, so a summer dinner deserves a reservation made days ahead, while a winter Tuesday will seat you nearly anywhere.

Sonya is the roster's most practised dinner companion, calm, thoughtful and unhurried across a long table. Most of the seasoned dinner names happen to sit on the brunette side of the roster, though the match matters far more than the colouring.

The booking itself is agreed on WhatsApp beforehand, so money never touches the table, and the staff's entire impression is a couple who enjoyed the tasting menu. Three hours is the honest minimum for dinner done properly; four breathes better.

No, and by design. The reservation stays in your name, made by you, so no restaurant anywhere holds a table connected to us. We will gladly point you toward neighbourhoods and styles that fit the evening; the table itself is yours.

Q02What should I tell her about the venue?

The neighbourhood, the hour and the dress code are enough. If the kitchen runs a tasting menu with a fixed start, mention it so the timing is confirmed properly, and if the evening opens with a drink elsewhere, name that too.

Q03How long is a typical dinner date?

Three to four hours covers an aperitif, dinner and a slow finish. Evenings that fold in a concert or a nightcap afterwards are simply quoted as such, per companion, and confirmed on WhatsApp before the date.

Q04Can a dinner date happen outside Amsterdam?

Yes. Utrecht, Den Haag and Rotterdam all hold good tables, and the travel sums from Amsterdam are stated plainly on each city's page. Allow around two hours of notice and the rest is identical: one quote, one confirmation, no record.

Q05What happens if the restaurant runs late?

Nothing dramatic. The booking measures her time, not the kitchen's, so a slow tasting menu is simply part of the evening. If the night looks like outrunning the agreed hours, one line in the thread extends it, priced and accepted before dessert settles.
